To make the Chicken:

  • 1 tbs. olive oil
  • 1 onion, chopped up
  • 3 tsp. tomato paste

  • 8 bone-in chicken pieces

Spices for the Chicken:

  • 1 tsp ground ginger
  • 1tsp cardamom
  • ½ tsp ground black pepper
  • 2tsp cumin
  • 2ts coriander
  • ¼ tsp turmeric
  • 2 bay leaves
  • 3tsp table salt.

For the Rice:

  • 1 cup water
  • 2 cups white rice

Steps:

To make this recipe preheat the pressure cooker until it is warmed up. This may vary based on the specific model of the pressure cooker. Add the onion and oil. Cook until the onion is soft. Add the garlic. Add the spices to the pressure cooker. Mix it around for 30 seconds. Add the tomato paste and the water. Once this is mixed, add the chicken. Coat the chicken in the cooking liquid.

When using the stovetop version of a pressure cooker, you need to turn the heat on the stove to medium to maintain a constant temperature. Once the lid is applied the chicken should be allowed to cook for 12 minutes and it will be done.

When the cooking time has ended open the pressure cooker. To do this the pressure needs to be released. Follow the instructions by the manufacturer. Be careful of any steam that may be released from the pressure cooker.

Carefully remove the chicken from the pressure cooker. Put the chicken on a platter, and cover with tin foil to keep it warm. Pour the cooking liquid out of the pressure cooker. The liquid should give 3 ½ cups. If there is not enough liquid, add water to make 3 ½ cups of liquid. Put the liquid back into the pressure cooker and add the rice. Mix it well.

Wait around 10 minutes once the cooking time ends. While the rice is cooling put the chicken skin side up under the broiler in an oven to brown the skin. This will only take a couple of minutes.

Put the chicken on a serving platter and add the cooking liquid. Add the rice to the chicken. Serve this dish while it is still hot.
